Fairtrade Fortnight - Vegan Banana Bread

One of our favourite past times is playing around with healthy and low sugar baking, personally I also love Vegan baking, even though I am vegetarian and not vegan I do eat as little dairy as possible and when it comes to baking I love making healthier vegan versions of things.

With it being Fairtrade fortnight we thought we would play around with one of our favourite recipes to create a no-added sugar naturally sweetened banana bread that really brought out the flavour of the lovely fair-trade bananas we bought. It turned out to be a real success with the little man and John loving the light and subtle sweet tasting loaf and Mr A not only enjoyed it as a midday snack but also for breakfast and with some much fruit goodness in it we couldn't say no.

So if your looking for something guilt-free, easy to make and perfect with coffee here is our recipe

3 Large fairtrade bananas, mashed
75ml sunflower oil
30 ml Rice syrup
125g Wholegrain Spelt flour
100g self-raising flour
2 heaped tsp baking powder
3 tsp mixed spice
50g sultanas and rasins
Dash of soya milk

1. Heat the oven to 180c and grease a loaf tin
2. Mix together the mashed bananas with the oil and rice syrup to nicely blended
3. Add the flours, baking powder and spice, mix well into a smooth consistency before adding the sultanas.
4. Now depending on the size of the bananas your mixture may be a tiny bit dry so add a dash of soya milk to get it a nice smooth consistency, with everything mixed in together well.
5. Spoon the mixture into the loaf tin and bake for around 60m until the loaf is golden and risen. Cool in the tin for 10 min before turning out onto a wire rack - then enjoy :)

So why buy fair-trade? Well I believe that one should be aware of what they are eating and where it is coming from and with the UK supermarket sector selling bananas so cheaply they are trapping banana farmers and workers in a cycle of poverty we simply don't understand here in the UK and buy making wise purchases, better but less, we can make a real impact and at the end of the day fair-trade bananas are still extremely reasonable to buy and it makes sense - given workers who have families to support, a better wage - everyone wins! So even though fair-trade fortnight has come to an end I am still sticking with Foncho to make bananas fairer.

  3. Mmm, yum yum! I'm getting more into vegan baking. Would love to try this. We can have spelt but would have to substitute the self-raising for gluten free self-raising which is very easy. Thanks for sharing.

  5. We always buy Fair Trade bananas - we can't afford to do everything, but always buy those. I love banana bread - might have to give this a go!

  7. I've never used spelt flour, is it easy to get hold of? I have bookmarked this recipe as I love banana bread, it feels almost good for you :)
