Easy vegan cake


This is a super simple chocolate cake that is dairy-free, vegan and fairly healthy as chocolate cake goes.
It's also a great little cake to cook with toddlers and Mr A loves making this, as cakes go it's fairly low in added sugar so it's not overly sweet but just right and perfect with a cup of tea.

So here it is…

100g Spelt Wholegrain Flour (Wholemeal will also be fine)
100g Plain Flour
100g caster sugar
20g Good Quality Cocoa powder - for example Greens and Blacks
1 teaspoon bicarbonate of soda
1/2 teaspoon of baking powder
1/2 teaspoon salt
75ml melted pure spread (or any vegan diary free spread)
1 teaspoon vanilla extracts
235ml water

For the the topping it's up to you but we used a thin layer of icing with some diary free sprinkles

1. Preheat the oven to 180 c/Gas Mark 4. Lightly grease and line a cake tin

2. Sift together the flour, sugar, cocoa powder, bicarbonate of soda, baking powder and sale in a large bowl. Slowly add the melted spread, vanilla and water and mix well until smooth.

3. Pur the cake mixture into the prepared tin and bake for around 45 mins until cooked. Remove from oven and allow to cool. You can either leave the cake plan or add a topping such as icing, it's also nice served with vegan ice-cream or soya cream.

      No just a veggie but I use to be a vegan although I have to say I love honey and goats cheese a little bit too much but I still love love love vegan food, especially baking, not sure why, it seems more of a challenge and also at the little mans kindergarten they ask the birthday cakes are vegan so everyone can have some so I am getting practise in now
