Being a parent can be testing at times to say the least but we all have our own ways of getting by and ways to ease the stress, dealing with tantrums and getting our kids to eat veggies and one thing I have learnt is most mothers have some tricks up their sleeve. I know when Mr A was a baby he loved pureed banana and avocado together - the perfect combination of fruit and vegetable, or telling him that Broccoli is baby trees and makes you as big and strong as a tree - this one still works! Easy Vegan Chocolate Cake
This is a super simple chocolate cake that is dairy-free, vegan and fairly healthy as chocolate cake goes. It's also a great little cake to cook with toddlers and Mr A loves making this, as cakes go it's fairly low in added sugar so it's not overly sweet but just right and perfect with a cup of tea. So here it is… 100g Spelt Wholegrain Flour (Wholemeal will also be fine) 100g Plain Flour 100g caster sugar 20g Good Quality Cocoa powder - for example Greens and Blacks 1 teaspoon bicarbonate of soda 1/2 teaspoon of baking powder 1/2 teaspoon salt 75ml melted pure spread (or any vegan diary free spread) 1 teaspoon vanilla extracts 235ml water For the the topping it's up to you but we used a thin layer of icing with some diary free sprinkles 1. Spelt Muffins and Sponsor Love
Lately this healthy muffin recipe has really been hitting the spot with both Mr A and I, they are packed with carrots, apple, whole-grains and low in added sugar. We used nearly all organic ingredients although you can substitute various things to accommodate what is in your kitchen cupboard. I get the little man involved in the baking as much as possible although of course grating the carrot and apple is left to me, but as soon as these come out of the oven and cool down they disappear. I'm not going to lie, I love snack time, I have to admit I am a natural grazer, which can be a dangerous thing but it you choose the right choices it can mean you have energy throughout the day and don't over-eat at meal times. Snacks are also very important to toddlers and our mid-morning and mid-afternoon snack times are perfect for taking a break from the chaos for a second. I like to keep food simple, fresh and fairly healthy but also tasty. We don't usually have crisps due to the fat and salt content but I believe everything in moderation and when Walkers sent us their new Mighty Lights to review I thought it was a perfect time to not only get my opinion but also that of my sons. Long Weekend lovelies
We had a really goodtime this weekend, it's always lovely having a long weekend and quality time as a family. The sun was out on Saturday and Sunday and even though it was raining today it didn't dampen a wonderful weekend. We had a forest walk, explored a new park, baked Spelt Sultana scones, ate good food, climbed some trees, rode on a miniture railway and enjoyed a bbq in the sun with family and some lovely South African Cider. We had a lot of fun baking some healthy spelt sultana scones with the little man, we climbed trees and I enoyed eating some lovely fresh salad - the one above is roasted vegetables with low fat mozzarella.
