Easy Easter treats

Homemade Fruit and Nut Chocolates 

So I have been playing around with different fruit and nut energy bar recipes and thought I would create some chocolate balls for easter as they are sort of egg shape (well they are too me anyway) and are super easy to make and pretty healthy as treats go, especially since I used 70% low sugar Dark Chocolate and the rest of the ingredients are all natural and when boxed they really do make lovely presents.

Fruit and Nut Chocolates

50g ready to eat Prunes or Apricots
50g sultanas or raisins
25g ready to eat dates or figs
25g flaked almounds
25g chopped hazelnuts or walnuts
2-3tsp lemon juice
50g good-quality dark chocolate

1. Chop the fruit and nuts in a processor or blender until nice and small. Add the lemon juice and process again. Scrap the mixture into a bowl and taste to see if you need to add more lemon juice.

2. Roll the mixture into small balls and melt the chocolate in a heatproof bowl over simmering water. Using two forks, roll the balls, one at a time, in the chocolate making sure it's all coated and then place on foil to one side to cool, then place them in the fridge for at least 2-3 hours to set.

I know the easter holidays are very busy for most people, so if you don't have time to make your own treats than I can highly recommend popping into Marks and Spencer which have a lovely selection of crafts, eggs and cute little bits and bobs to help get you in the easter mood, They were kind enough to send me a few goodies to try out and review including the cutest little polka dot mug, which is a perfect gift for Mamas who are trying to avoid over indulging in chocolate (hands up). I also love their divine chocolate bunny biscuits which melt in the mouth and were so moorish.

They also have an array of luxury Eggs and hampers and something for everyones budget. We don't plan to spend a lot this Easter, as with every year, so instead we carefully pick a few good quality eggs, as we truly believe in quality over quantity and Marks and Spencer is perfect for that. I am also really in love with these quirky box of mini chicks - how cute are they!

Either way this Easter don't stress, just enjoy the family time, baking a little, pick up a few things here and there, indulge in some fun crafting activities and laugh a lot - well that is our plan anyway.
