Chocolate fondants


Okay so stick with me on this one when I say the main ingredient here is black beans but oh do these chocolate pots taste so good and was huge hit with everyone in the house. I had seen a lot of people using black beans in desserts over the past year, especially with vegan baking but have always kept my distance until I came across a recipe in "Super healthy snacks and treats" and thought I would give it a go and I am so glad I did. I changed a few things to suit our tastes but Mr A loved making these with me and they are pretty low in added sugar are also gluten free and with low fat creme fraiche this is a light but decadent dessert with loads of depth. I would serve this up at a dinner party they are that tasty.

Makes around 5-6 ramekins

Around 200g Black Beans (half a can)
20g gluten-free flour - we used Rice flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
45ml maple syrup or argave
1 tablespoon sugar
25ml coconut oil
1 teaspoon vanilla essence
1 teaspoon grated orange zest
70gm dark chocolate chips

1. Preheat Oven to 180c (350F) Gas 4
2. Drain beans and put them in a food processor and blitz until completely smooth. Add the remaining ingredients, including most of the chocolate chips (although keep some to scatter on top of the pots). Blitz again until everything is mixed in well.
3. Spoon the mixture into the ramekins until each one is about 2/3rd full. Scatter the remaining chocolate chips on top of each pot
4. Place the ramekins in the oven and bake for around 15 mins. Allow to cool for 5-10 min - best eaten as soon as possible although they do keep in the fridge for about 3 days - just heat before eating as this makes them nice and gooey on the inside. I added a dollop of Creme fraiche to mine.

  4. This recipe would be perfect for us. I love using legumes in baking. Chickpeas are usually my choice but I'll certainly try this. Great towels too. Trying to think of who they'd suit for Christmas!

  5. this sounds great! I recently tried out avacado chocolate mousse to try something different and although you could taste the avacado when you knew it was there, it was pretty good!
