When it comes to special occasions I am all about the small details and the little things you can do to show your loved ones how much you care. It doesn't have to be a big grand gesture or something expensive but rather a home-made card or breakfast in bed, which is always my preference over anything else, so for this Fathers Day I have planned something a little extra special. Both John and I are big coffee fans, I mean who isn't when you have kids, hello caffeine! We have been trying to refine the art of coffee making at home and I recently upgraded our ageing coffee machine to a Krups Nespresso Prodigy & Milk coffee machine and will hopefully master latte art soon but for now I thought I would put something quick and easy together for Fathers Day as I know I will be short of time with the two kids running around wanting to help. Pancakes in our house is a regular thing on Sunday mornings so I thought I would get creative with my go-to American style pancake......

Coffee, Cream and Breakfast in Bed
Our favourite Gluten Free pancakes After trying out a few different recipes, a few months ago we all agreed that these Gluten Free pancakes were the best going and often having them on Sunday mornings as a family treat. They are super easy to make and contain now wheat or gluten although they do contain eggs as well as delicious greek yogurt. I often cover mine in sliced bananas but on this occasion we were excited to try out some Choc Shot which had been sent to us and made a lovely chocolaty change without all the sugar and calories as it's 100% natural from carob and is gluten and diary free and suitable for veggies/vegans and the little man has become a real fan of having a dash of this in his almond milk. Chic Shot has been a hit in our house Gluten Free pancake recipe 200g gluten-fre flour blend (we often use rice flour) 1 1/2 tsp gluten free baking powder 2 free range eggs beaten 200ml milk - dairy free versions also work, we use almond 120g greek yogur......

Coffee and Breakfast
What is better than waking up and having a lazy morning alongside a beautifully made coffee, pancakes, chocolate cake (why not) and some family and friends to share this gentle start to the day? Well I can tell you we have been making the most of our new Tassimo machine to make these moments a little bit more special and a nice upgrade from our normal filter coffee. We have a bit of a tradition in our house that Sundays is all about pancakes, sweet, savoury or a bit of both and we try to mix things up everyone now and then. Gluten free pancakes and free-range scrambled eggs are a favourite in our house We always find mornings as a great time to socialise and why not make them special and throw a little Coffee morning even if it's juts for family? We decided to make this one a little special with some divine Chocolate brownie cake, it's indulgent but when shared with others it's makes for a nice one off treat. Easy Sunday Morning
Sometimes I wish I could stay in bed all day ( image ) We make life what it is, we see the things we want to see. On sundays I like to look for the whimsical, the lazy, the cosy, the calm to the start of the day. Is there really anything better than a lazy sunday morning with american pancakes (preferable made by someone else) and a fresh cup of coffee wrapped in a soft quilted throw in a wonderfully light kitchen with large windows...well we can all dream and why not I say...life is too short not too. How cute are these ( image ) What I want to wake up too ( image ) ...
Indulgent pancakes - they way to start a sunday ( image ) If anyway was made for dream Sunday was, it's one of those days when my mind wonders to wonderful places, enticing smells of exotic food, dreams of lying on a hammock near white golden sands or putting the key into a beautiful red door of my dream home and why not I say - what would the world be without wonderful dreams. These look simply amazing I think my love of whimsical Sundays has come from my mothers love of a lazy brunch. Growing up in South Africa sundays were always long sunny affairs that were spent taking things slow, she was the master of putting together beautiful sundays brunches with french toast, different jams, frittatas, freshly squeeze lemonade from our lemon tree and all of us sat around the table outside overlooking the garden and simply enjoying the peace, quiet and family time together. Breakfast treats for Yogurt week
I love yogurt, always have and I love how versatile it is, you can bake with it, cook savoury dishes, spoon it over fruit and oats or have a bowl of greek yogurt with a dollop of honey for dessert and for those who don't know it's Yogurt Week , so I thought I would celebrate with creating two lovely breakfast treats. My first port of call when it comes to a lazy sunday morning brunch is pancakes and pancakes crammed with yogurt goodness is even better and alongside some scrambled eggs and a dash of maple syrup it screams weekend to me. Easy Yogurt Pancakes 140g Greek Yogurt 1 large egg 1/2 a cup of Plain flour (I often do a 50/50 wholegrain and plain) 1 tsp baking powder Optional - 1/2 cup of blueberries 1. Mix the yogurt and egg in a bowl until smooth then add the flour and baking powder until all mixed in. The batter will be thick 2. Life lately....
It's been a while since I have done an instagram post lately and thought I would share all the simple pleasures and adventures we have been getting up to of late. The weather has been blissful which has meant being able to get the boat shoes out, have also been enjoying lots of coffee and cake dates with the little man, Polenta cake being a hit at the moment We have also been trying to make the house more a home - we still have a long way to go as everything still looks a bit empty but we are slowly getting there for example with out little diner nook in the kitchen and also picked up these cute ikea tumblers for 50p each!
