Easy as pancakes


You have got to love long weekends!!! This weekend has been rather erratic, with house views, photography shows, coffee shop stops and entertaining a baby on the brink of walking. In between all of this I still love to fit in cooking and baking. I always try and make a well balanced supper but with the mornings be busy I don't often have time to bake so I thought I'd whip up these fairly healthy pancakes, made with low fat yogurt and soya flour. It went down really well with the whole family, including Arthur. John and I are still on a mini-mission to visit every Cafe in Cardiff that does american style pancakes - it's my one vice!

175ml Low Fat Yogurt (I used Greek)
Approx 100ml soya milk (add to the consistency you want)
1 large egg
2 tbsp melted butter
2-3 tbsp Agave or honey
100g self-raising flour
50g soya flour

Simple easy peasy and top with whatever you want.

On another note I really wish I was in NYC for the Independent Fashion Bloggers conference at Milk Studios - so many amazing bloggers and speakers, plus magnum ice-cream are going to be serving up little luxury ice-creams , as well as there being a Nail bar and hair styling. Really really really wish I could go...boohoo for me, but hopefully a New York visit will be on the cards soon.
