Okay so first of all these are still muffins and in my mind muffins are treats but I do always try and make them as wholesome as possible with fairly low added sugar but still sweet enough to be loved by a toddler. We have been growing courgettes in the garden and had a few at hand and thought why not turn them into a yummy treat packed with veggie goodness. I first saw this recipe in my Able and Cole cookbook and made a few changes to such as using wholemeal flour and lessening the sugar by more than half. They are super easy to whip up and they went down really well with everyone 125g Wholegrain Spelt Flour 125g Plain White flour 1 mug of grated courgette 70ml Olive Oil 2 tablespoons Argave 50 gm sugar 2 large free range eggs 1 lemon, zest and 3 tbs juice 1/2 tsp ground cinnamon 1 tsp bicarb of soda 1/4 tsp baking powder a handful of crushed nuts A little honey 1.
