Healthy Courgette Muffins

Okay so first of all these are still muffins and in my mind muffins are treats but I do always try and make them as wholesome as possible with fairly low added sugar but still sweet enough to be loved by a toddler. We have been growing courgettes in the garden and had a few at hand and thought why not turn them into a yummy treat packed with veggie goodness. I first saw this recipe in my Able and Cole cookbook and made a few changes to such as using wholemeal flour and lessening the sugar by more than half.

They are super easy to whip up and they went down really well with everyone

125g Wholegrain Spelt Flour
125g Plain White flour
1 mug of grated courgette
70ml Olive Oil
2 tablespoons Argave
50 gm sugar
2 large free range eggs
1 lemon, zest and 3 tbs juice
1/2 tsp ground cinnamon
1 tsp bicarb of soda
1/4 tsp baking powder
a handful of crushed nuts
A little honey

1. Heat the oven to 180/Gas 4
2. Whisk olive oil, sugar, argave, eggs, lemon juice, zest and cinnamon together until light and fluffy
3. Mix together the dry ingredients in a separate bowl - flour, bicarb and baking powder.
4. Gently mix the dry and wet ingredients together and than add the courgette and nuts but save a few nuts for the topping.
5. Divide the mix between a 12 hole muffin tin and dot the tops with a few nuts
6. Bake for around 25-30 min until a skewer comes out clean. Drizzle a little honey over the tops when you take them out the oven.
7. Eat, enjoy

  2. I really want to try this as I love the idea of getting more veg into my kids under the guise of cake. Also, there's a great chocolate mousse recipe doing the rounds, which is made from avocados instead of cream and I want to try this too as mine have stopped liking avocado.

  7. Today I accidently ordered 10 courgettes (true story!) so I couldn't of seen this at a better time! Will give them a go this evening!
