Being a parent can be testing at times to say the least but we all have our own ways of getting by and ways to ease the stress, dealing with tantrums and getting our kids to eat veggies and one thing I have learnt is most mothers have some tricks up their sleeve.

I know when Mr A was a baby he loved pureed banana and avocado together - the perfect combination of fruit and vegetable, or telling him that Broccoli is baby trees and makes you as big and strong as a tree - this one still works! To this day I still love to combine veggies and fruit together in a fun and tasty way that encourages Mr A to gobble it down such as one of our favourite low-sugar healthier baking treats - Spelt Carrot and Apple Muffins



Wholegrain healthy muffins


These are packed with goodness and whole grains so why not give them ago

100g Wholegrain Spelt flour 
75g Plain Wholegrain flour
1 medium apple, pealed, cored and grated
135g coarsely grated carrot  
2 free-range eggs
1 tsp baking powder 
40g fairtrade soft brown sugar
1/2 tsp ground cinnamon 
 2 tbs Argave Syrup
1/4 tsp bicarbonate of soda 
 65g Vegetable Oil
135g coarsely grated carrot 


1. Preheat the oven to 180C or gas mark 4 and prepare your muffin cases
2. Sift the first 5 ingredients into a bowl, stir and set aside
3. In a separate bowl whisk together the sugar, oil and eggs until fluffy, then stir in the apple and carrot.
4. Add the wet & dry ingredients together in one bowl, stir together until you get a smooth constancy, if you need to add a splash of soy or milk to get the right texture than do so.
5. Pour the muffin mixture into the muffin cases and bake for around 15mins or until the tops of the muffins spring back when you touch them.
6. Leave to cool

Mr A loves Ice-cream like most toddlers do but he is always dripping it everywhere, usually all over himself so a super easy way to solve that is put a muffin case around the cone - problem solved.

So what tricks are there for busy Mums on the move who are running from one place to another, picking up kids from school, doing the shopping, laundry, coffee dates, work and everything else in between? Well I personally like to attempt to keep on top of things especially finance but it can be different when doing all of these things so I downloaded the NatWest mobile banking app which works of nearly all types of smartphones and try it out and see if it made my life any easier. Now I am not exactly an app whizz but I found it easy and secure to use as well as fast and it allowed me to manage my money at a time that suits me and being able to transfer money from my business account to my personal on the move has help in more than one instance so far. You can also check balances, pay friends or the best yet if you leave the house without your card you can still do withdrawals at NatWest cashpoints. Easy Peasy I say and anything that makes Mums life more efficient makes will certainly make parenting less stressful.

  2. The muffins sound delicious. Pity about the sticky residue on your daughter's face though. It would be better for children to eat the muffins uniced. I went overboard on that aspect when I had a toddler 40 years ago. I handed her a piece of chocolate after we had worn ourselves out on a walk. She looked at me with tears in her eyes and a quivering lip. 'But that's not good for you'. So funny--and it taught me to reign back. Visiting from UK Bloggers.

  3. haha i love the broccoli thing! i still remember that episode of rosie and jim where they went to the supermarket and made a train out of oranges, jelly babies for people and broccoli for trees! always stuck in my mind, that :)

  5. I keep meaning to bake with spelt flour but I've never got round to it! I've tried to convince my son that broccoli is 'little trees' but he just says, 'No, that's broccoli'!

  6. those muffins sound good! I always make my own soups, pasta sauces etc from scratch, They're packed full of veggies that not everyone would eat otherwise!
